Neotame, a new high-intensity sweetener and flavor enhancer, is expected to receive Food and Drug Administration approval for use in foods and beverages in the United States soon. Since it will then be the newest approved sweetener in the U.S., it is appropriate to review its development, characteristics, and potential uses. Neotame is a derivative of the dipeptide composed of the amino acids aspartic acid and phenylalanine. It is 7,000-13,000 times as sweet as sugar and 30-60 times as sweet as aspartame. It is manufactured by The NutraSweet Co., Mt. Prospect, Ill., the company that developed the noncaloric sweetener aspartame.
